Nice folks, if you really want to enjoy vegetables, you have to cook or prepare (if raw) them as main dishes. The problem with a lot of cooks, including a lot of our wonderful mothers (how we love them!), is they treat veggies as "side dishes." So they give very little attention to vegetables. In fact, one person I talked to said that cooking vegetables was easy. All you had to do was to put the veggies in boiling water, and that's it. Sorry, but that's wrong. That's "side dish thinking." To really enjoy vegetables, you have to go into "main dish thinking."

 

Once you treat veggies as main dishes, a lot of things change. For instance, you add more spices that fit the dishes. You literally spice it up. You use sesame oil to spice it up even further (and sesame oil in just about every vegetable dish is GREAT). You learn to innovate. You learn what goes well with what.

I’ve already posted processes in the “Teach me how to cook” thread, but I’ll give a sample here. Please remember that this is not a recipe. It’s a process or a procedure. So there are no exact amounts. Adjust them to your needs.

 

I decided to start with the vegetable almost everyone seems to hate: AMPALAYA.

 

Come on folks, give ampalaya a chance.

 

Ampalaya is best eaten crunchy. It remains bitter, but you really can’t do anything about that. But you can still make an ampalaya dish wonderful.

 

What you need:

 

Ampalaya (of course)

Potatoes

Peanuts (cashews are best, but ordinary unskinned peanuts would do … Grower’s kung baga)

Spanish paprika

Cayenne pepper

Salt and black pepper

Sesame oil

 

The process/procedure:

 

Dice the potatoes and cook them. This is best done in a microwave oven, because it takes less time (besides, you’ll be cooking them again). While the potatoes are cooking, slice the ampalaya in semi-circles. Fry them in vegetable oil. During the frying process, sprinkle some salt, black pepper, and cayenne pepper. Stir. Then be generous, VERY GENEROUS, with your addition of Spanish paprika.

 

Sprinkle some salt on the cooked potatoes, then put them in with the ampalaya. Stir, stir, stir. Again, sprinkle the dish with Spanish paprika. By this time, the ampalaya should already look brown. Once you get that aroma of vegetables that have already been cooked, put in the peanuts. Continue to stir for about three minutes. Tanchahan na lang. Sprinkle some sesame oil on it once you turn off the stove.

 

The dish is done.

 

This is best served on top of hot rice. For added flavor, you can put some hot sauce. It’s also best eaten with chopsticks. I don't know why, pero ganoon e.
