I eat vegetables almost every day - usually a combo of 3 or 4 of the below which are regulars in my diet(mix and match colours). They are always however a side to some sort of meat:

 

potato - mashed or roasted

pumpkin - mashed or roasted

zucchini - steamed

broccoli - steamed

beans - boiled or steamed

carrots - boiled or steamed

peas - boiled

bean sprouts - boiled

brussel sprouts - boiled

capsicum - grilled

eggplant - grilled

corn - boiled

cabbage / water cabbage - boiled
