Sorry, maybe this is not provincial food...but the last time I was in Davao,

I tried something called 'balbakwa'..(??)

 

It was delicious. I think it was cow's fat or skin but I could be wrong!

 

Anyway, I would love to eat it again...but when I ask my phil friends,

even some of them have never heard of it... :(
