agxo3 Posted July 15, 2004 Share Posted July 15, 2004 My own special bbq baby back pork ribs - marinate overnight in a beer/salt/pepper/lemon juice/jalapeno/sugar mixture; smoke at 275 Deg F for 4 hours; rub with mustard/brown sugar (or your choice bbq sauce) and sear over 550 deg F coals. Mmmmmmmmmmmmmm...................... Next best fav is the "black meat" from a local store called Schaub's (not in Manila - it's in Palo Alto, CA) - tritip marinated in a secret marinade. Oh - you meant at a restaurant? Hmmmmm........the "coffee and donuts" at the French Laundry in Yountville (Napa Valley). Thomas Keller is not considered the best chef in the for no reason.
