Because, if it goes well, you can always ask for a lunch/dinner or watch a movie right after. If you don't find your date to your liking, you can just say your pleasantries and leave. But if you found yourself interested, you can ask if they would like to have a meal with you. They might say no, that they have prior commitment, etc. But it won't be because it's already late.
