what i do is get a big thick steak, and sear it on a really hot iron pan with just a tiny amount of olive oil to prevent it from sticking at most 90 secs per side (depends how thick), take the pan out of the fire and let it rest under some foil for, oh say 10mins until the juices come out.

 

Take the steak out and put the juice back on the fire and add a big pat of butter and season with some fresh ground pepper and pour over the steak. Some boiled new potatoes on the side. mmmm!

I love Meat, In Aus we cook meat all the time on BBQ. My most fav is Lamb,pork,chicken and beef. :P and no I have not eaten Kangaroo meat..it's expensive because it requires people in outback areas to ship it to the coast where 75-80% of the population lives so most people in Aus have not eaten Kangaroo. :D
