ATONG ANG Posted August 2, 2004 Share Posted August 2, 2004 tried little caesars today. the dough was thin but very oily. from the looks of the dough, it had a high water content. this kind of dough produces a soft dough but absorbs water or oil easily. worse, they used it for thin-crusted pizzas, hence, the sacrificing crustiness of dough surface. the toppings were rather good, though; just hope they improve to a thin crusty dough. ATONG ANG Posted August 2, 2004 Share Posted August 2, 2004 even magoo's quality has deteriorated. nagpa delivery kami nung sunday, & parang lumiit yung pizza, & malambot yung crust (but this could have been a result of the coldness of the atmosphere cuz of the rain). rain or cold atmosphere has little to do with softness of crust. it would actually aid in the hardening of crust. this has the same principle some people practice when rinsing noodles in cold water immediately after cooking. for a demo, try dipping hot french fries in ice water and taste it, it makes the fries crunchier. aside from the oil solidifying, the starches inside 'firm up'. softness could possibly be affected by high water or oil content of the dough or its thickness. hope this helps Quote Link to comment

The place is just a small but owned by an Italian and managed by another Italian. The pizzas are just how it should be - thin crust and not overly filled. The prices are also very reasonable.
