Add to this also the tendency of f & b establishments nowadays across all price points to cut overhead costs by utilizing cheaper though not necessarily quality ingredients in preparation/cooking and hospitality/culinary students as temps or interns without the accompanying stringent kitchen supervision and management of these neophytes and the end result is a disaster waiting to happen. I'm actually surprised nobody has complained or aired any case of mass food poisoning given what they are currently doing. A friend of mine recently had his weekday lunch at a prestigious five star hotel (whose establishment name I will not mention) where there was a buffet and he had the unfortunate experience of being served what was clearly undercooked Japanese style chicken karaage when he took the precaution of slicing thru the meat before eating it only to found out what he did not expect. Adding to his disappointment was being served supposedly steamed pompano from the "fresh seafood section" that was not even adequately and thoroughly steamed by these so called culinary professionals. If this is the kind of service we get nowadays considering the king's ransom we have to pay just avail of their so called superior dining facilities and fine ambiance, then I can only shake my head and wonder what the type of and quality of food and service to their patrons must be like during the weekends when such places are usually filled to the brim entire families and other types of group diners.
