Para sa akin Chicken & Pork Adobo na Cooked Thrice. First cooking ay Stewing it sa kanyang sauce/marinade na Vinegar, Toyo, Garlic, Peppercorn at Bay Leaf. Ang second cooking ay Frying the Pork and Chicken. Third cooking is pouring back the sauce and simmering it until it is reduced.

Then matching the Adobo with Kare-Kare. The sauce has to be made from scratch. Toasted peanuts and toasted rice/malagkit are grounded for the sauce. (No Mama Sita Mix pls.)

And then, Green Mangoes and Sauteed Bagoong Alamang for sides and sawsawan.

 

Note: My mom used to make kare-kare with "tuwalya" and "bituka ng baka" but too much cholesterol nowadays for me. So, I'll settle for tuwalya and buntot ng baka, a little healthy ??? "kuno"
