  1. i have to agree hap chan has some of the best brocolli aound. it is soft yet crisp. as for fish fillet, i presume you are referring to steamed fish fillet with garlic. it depends on the branch. that's the difficulty in franchising; they can never be consistent. superbowl and david also has nice steamed fish fillet.

     

    beef brisket has to be firm to the bite yet soft and easily chewed into smaller pieces. it also has to capture the essence of beef. with hap chan, you're probably referring to braised beef brisket in soy sauce, which is the core ingredient in beef noodles. the beef has to be slowly cooked for a period of time long enough for the juices to come out and for the brisket to become tender. ling nam, hap chan and dragon noodle all have decent beef brisket. chowking is easily identified as using buffalo meat or carabeef as these do not have the rich taste of beef. one can easily taste the beef flavorings of the soup as the meat is tasteless.

     

    tumpak! steamed fish fillet in garlic and braised beef is soy sauce. i often went to the manila (malvar?) branch a couple of years back with my gf bec. she lived near the area. we tried the makati ave branch months ago, it's also very good, pero iba pa rin sa manila.
