Sisig is the Capampangan term which means to snack on something sour. It usually refers to fruits, often unripe or half-ripe, sometimes dipped in salt and vinegar. It also refers to a method of preparing fish and meat, especially pork, which is marinated in a sour liquid such as lemon juice or vinegar, then seasoned with salt, pepper and other spices.

Sisig as is popularly known today is actually sizzling sisig, made from parts of pig’s head, usually seasoned with kalamansi or chili peppers and served on a hot plate.

 

The dish is said to have originated from locals who bought unused pig heads from the commissaries of nearby Clark Air Base. Pig heads were bought cheap since they are not used in preparing meals for the U.S. Air Force personnel stationed there. However, a more accurate explanation is just an innovation on the old recipe, which is pork ears and jowl, boiled, chopped then marinated.

 

The pig's head is first boiled to remove the hairs and to tenderize it. It is then chopped and grilled/broiled and fried with onions and served on a sizzling plate.

 

Variations of sisig include eggs, ox brains, chicharon (pork cracklings), pork or chicken liver, and even mayonnaise.

Recently, local chefs have experimented with ingredients other than pork such as chicken, squid, tuna and even tofu, which brings sisig back to its origins.

best sising basing from my experience would be Pier One Fort Branch..I've tried the sisig of other Pier One branches but it does not quite compare with that of the fort..try it tama lang ung crunchiness at texture, hindi matigas plus sakto din ung lasa. :cool:

 

dagdag ko pa sarap pa din talaga sisig ng pampanga :D :D

Da best din sisig dito sa may RADA st. Makati, ung jolijeep na nasa kanan pangalwa sa dulo pag galing ka ng legaspi cor RADA. masarap at afordable talga.....

 

Just order your sisig in advance! Wala na agad before 12.

 

Anybody knows the famous sisig place at pampanga? Heard that they serve very good sisig there.

yup aysies and wiggly have good sisigs. tried the rada sisig mga gabi na, masarap talaga sya.

 

pero gusto ko pa rin yung sisig na ginagawa namin dito sa bahay, medyo kilawin type sya (visayan style) yummy talaga.

di ko pa nasususbukan yung wiggly at yung jollijeep sa rada.

 

btw, na try nyo na yung monterey sisig?
