strangely enough...... one of the best sisig I've tasted came from KIKU Japanese Restaurant located inside Robinsons Galleria Suites (4th level i think). Perhaps due to the fact that within the restaurant, there is a karaoke/ktv. That would probably be the reason why sisig was avaialble.

 

Their version is very crispy, less oily and in some ways the texture is more like crispy pata skin chopped into very fine morsels. Of course, this was 5 to 6 years ago.... I am not certain if the resto is still open though.
