Yellow Cab's Meatlovers Pizza

Sbarro's Manhattan or Pepperoni Pizza

Pizza Hut or Shakeys (generic)

CPK's good and the ingredients are really prime, but i don't eat there as often cos it's quite expensive when you want to pig out on pizza. (500++ for a 12 inch pizza)

Never liked Greenwich, tastes like a lame chunk of bread to me

I have not found great pizza here in the Philippines, forgive me I lived in New York for a spell and have been forever spoiled.

A good thin crust can be had in the fort at Gordo's. The best here is my own that I make fresh.

The real secret I think is fresh hand tossed crust, a very hot oven with a pizza stone, a simple sauce made with Italian tomatoes, fresh basil, pepper, a pinch of salt and a bit of garlic, and fresh mozzarella cheese.

I wish that some enterprising individual would start a buffalo mozzarella operation here in this country. You already have the Carabou's and they produce the best mozzarella and ricotta cheese.

Its a gold mine in the making!

I still think that the best pizza is the one you make yourself, and the simpler the better.

Here is my recipe for a truly great pizza.

If you can make this then do so. You will not be disapointed!

Crust:1 pkg(2.5tsp) active dry yeast

1 cup warm water(110deg f)

1/2 tsp salt

pinch of sugar

2 tbsp good olive oil

2 1/2-3 1/2 cups of all purpose flour

Mix water, sugar, and yeast, in large bowl. let sit for 5 minutes

mix all dry ingredients and add to liquid mix, add oil

mix well

turn out onto floured counter or board and knead until you have a soft pliable dough(should feel like a nice ladies ass!)

coat dough ball w oil and rest covered for 15 minutes

Rolls out to 2 12" thin crust doughs.

Sauce

12oz can diced tomatoes

2oz fresh basil leaves-chiffonade(that means thin strips to you nonfoodies)

1/4 tsp fresh ground black pepper

pinch of salt

pinch of sugar

1 tb of good olive oil

1-100 cloves of garlic-smash and chop fine-All depends if you like garlic

Topping

Fresh Mozzarella Cheese- thinly sliced-about 8oz for a pie

Parmiagiano Reggiano-Shaved- about 2oz

I'm a purist. I like my pie simple, thin crusted, crispy, and I like tasting each component so that I have layers of flavor.

If you like. You can top this pie with some toppings but go sparingly!

Bake your pie in a 475 degreee oven and keep an eye on it.

I use a pizza stone in my oven. You can use a pan but if you do you may want to prebake your crust to ensure that its crispy.

Mangia! and Buon Appetitio!
