Doesn't matter if you have the best speciality beans and best machine, if your barista doesn't know how to calibrate or pull a shot of espresso, it does not matter if your Yardstick or Toby's, it would still be a bad cup of coffee. Trusted coffee shop in the Metro is of course Yardstick. Notable shops are Dueces, Tobys, Spotted Pig, H Proper, Satori. Sometimes the reason for a bad cup even though its a specialty coffee shops, usually the lack of training for the barista, or the lack of oversight. To pull a good cup, there are a few extra steps that you would take, that sometimes its tedious, or some might say its a hassle, just skip that step etc. I understand sometimes, that the influx of customer is just too much for the shop, and they just want to push out as many coffees as possible during that rush hour.
