I recently rediscovered this dish of my youth in a wedding where I was the best man. Have you ever heard of "lafongga" (the dish, not the act!)? This could be one of the most sinful Filipino dishes I have ever tasted.

 

Hold your breath: It consists of pork fat and skin with very little meat attached, possible achuete for the orange color, and sugar for sweetness (or maybe it was caramel)! When you put it in the fridge in order to separate the fat - it doesn't.
